Wild Edibles Series - Gammy's Sweet Dandelion Deviled Eggs

For those of you who are new to my blog, I've started a Wild Edibles Series in which I'm studying and incorporating wild edibles (medicinal) herbs into my diet.  You can read about it here.   As promised, I've shared the Dandelion recipes that I love!  To dateI've shared how to make:

Yesterday, I made some of my deviled eggs.  They were repeatedly requested for food gathering over the 30+ years I've been making them.   So, I must not be the only one that loves them, right?  So what do I do... I go and change the recipe.  My kids would say "so ... what's new?"  (sarcastic, rhetorical question)

As, a side note, my children hated the fact that I continually altered recipes (mainly the ones they liked) when they were growing up.  Hey, I cooked with what I had.   They get it now... they're parents.

I love it when that happens!

Now that I only need to cook for one...  i don't.  Well, not much anyway.  If I do cook, my meals consist of a lot of crock-pot recipes or sandwiches, so if I'm in the kitchen to eat (canning and holidays are an exception) it better be quick and easy or I'm grabbing the loaf of bread!

For some reason, I was in the mood for my deviled eggs ad thought they would be a great recipe to incorporate Dandelions.  Let me tell ya... so good.

I'll be making them again soon... for Easter (I'll cook... it's a holiday)

A couple years ago I made dandelion blossom jelly. It was fabulous and so good on pancakes. Nobody could guess what it was. My brother thought it tasted like apricot. I felt so Granny Clampett-ish while I was making it. When Spring finally comes again, I think I will make another batch.
